|Zucchini Pancakes aka Latkes|
Zucchini Pancakes or Latkes
2 cups grated zucchini (don't peel the zucchini...grate the entire zucchini)
1/4 cup green onion or we've also used diced white onions
1/4 t. garlic salt
1/4 cup fresh parsley or 4 t. dried parsley
1/4 cup flour (I used self-rising)
Combine all ingredients using mixer, whisk or food processor. Heat skillet, spray with non-stick cooking spray. Spoon batter (about 2 tablespoons makes a pancake) into skillet. Cook until brown; about 1-2 minutes per side. Serve while warm. Makes 8-9 pancakes.
Note-if using diced white onion you might want to saute them until caramelized and then add to the rest of the mix.
