Baked Egg Muffins

I've got a great recipe for those of you that feel rushed in the morning and need something that is quick, easy and appetizing to feed the family! I was browsing Pinterest and ran across a picture that showed the process of making these baked egg muffins. I couldn't wait to try these...they looked too good to be true!
A quick and easy breakfast...Baked Egg Muffins

You will need -
(makes 6 egg muffins)
  • jumbo muffin tin
  • butter spray
  • 3 English muffins
  • pre-cooked breakfast meat, of choice (diced ham, pre-cooked turkey sausage, Real bacon bits)
  • shredded cheese (I use a blend of cheddar and jack)
  • 6 eggs
  • salt & pepper
First, pre-heat the oven to 350° degrees. Spray the muffin pan with butter spray. Place 1/2 of an English muffin in each tin. I don't force it to the bottom. I just try to make it so it will hold the ingredients.

...now it's ready to bake

Once you have the muffin in the tins, add your favorite breakfast meat (Real bacon bits, pre-cooked turkey sausage crumbles, diced ham, etc). Next sprinkle a little cheese over the breakfast meat of choice. Now crack one egg into each of the tins. Lightly spray the eggs with the butter spray. Salt and pepper to taste.

Bake for 15-20 minutes. At 15 minutes, in my electric oven, the eggs are done.

By the way, I traced back that Pinterest picture and the recipe comes from the Picky Palate.
