This Lo Mein dish is the 2nd in my list of Top 5 easy dishes! I think it's a great meal if you're a short on time and to want to prepare something that's different, easy, quick and healthy. In case you missed it, number 1 in my Top 5 easy dinner list was Crock Pot Turkey Breast.
|Chicken Lo Mein with Peanut Sauce|
First, I used thawed, boneless, skinless chicken breasts, fried 6 minutes each side and cut into bite-sized pieces. In a real pinch, the pre-cooked chicken strips from the freezer section at the local grocery store works great too.
I use Asian-style vegetables (green beans, broccoli, onions and mushrooms) found in the freezer section and prepare them using my microwave steamer. It is not necessary that you use a steamer, you can follow the directions on the bag and microwave them in a bowl or stove top cook them. As far as the veggies go, you can use whatever your family prefers, I also used cauliflower, carrots and broccoli too.
While the veggies steam, cook your spaghetti according to directions and drain. Once the pasta, chicken and veggies are done. I mix them all together in the pasta pot with a 1/2 cup of peanut sauce. I used a bottled peanut sauce but you can easily make your own.
1/4 cup peanut butter
1/4 cup water
2 tbsp soy sauce
2 tbsp lime juice
2 cloves garlic, minced and crushed
2 tbsp rice vinegar
Cook ingredients in a small sauce pan until smooth and creamy. It may be necessary to thin with a little water depending on how you are using the sauce.If desired, garnish the dish with toasted crushed peanuts, chow mein noodles or sunflower seeds.
