Mmmmm...Great! Macaroni & Cheese

I felt confident that I had prepared enough mac-n-cheese over the years that I could spot a winning recipe to enter in the Crazy Cooking Challenge, if I ran across one and I can truly say that as soon as I read this recipe, I was sure this was it. The big confirmation came when I prepared it for my family...they went gaga over it.

I found my Ultimate Macaroni and Cheese recipe at We Heart This, where Krista further sold me on it when she wrote, "The end result is a creamy, cheesy macaroni and cheese that is anything but bland. I usually only make this if I’m having company because it does produce quite a bit and it is like crack. I wasn’t kidding about trying not to eat the entire pan."

The Ultimate Macaroni and Cheese

16 oz. macaroni (I used the jumbo macaroni so the sauce gets inside the pasta too!)
1 ½ c. Panko bread crumbs                                                
16oz. shredded sharp cheddar cheese
8 oz. Parmesan cheese
8 oz. Velveeta cheese
2 eggs - (room temperature)
Butter (recipe called for un-salted but I used what I had on hand)
2 -12 oz. cans evaporated milk
Toast panko bread crumbs
½ t. Tabasco
2 t. powered dry mustard
Salt & Pepper
a few dashes of paprika

1 1/2  c. panko bread crumbs
4 T. butter
1/4 tsp. salt
a few dashes of paprika

Melt butter over medium-high heat, add salt and paprika. Add panko crumbs and coat thoroughly with butter. Stirring frequently, heat until toasted, about 8 minutes. Remove from heat and set aside.
Mix the 3 cheeses

Macaroni and Cheese
1. Preheat oven to 400 degrees.
2.  Combine all 3 cheeses into a separate bowl and tossed evenly with each other. Set aside.
3. Combine cans of evaporated milk, eggs, mustard, salt, pepper, and Tabasco in a bowl and whisk together until ingredients are well-combined and eggs are completely beaten. Set aside.  

4. Boil pasta in salted water for the time given by the al dente instructions on the box.

Assemble ingredients for baking.
5. Once pasta is cooked, drain and return to pot. Toss with butter until coated.  

6. Give evaporated milk mixture a few extra whisks and then add to pasta with half of cheese, stirring over medium to medium high heat until cheese is melted. Add remaining cheese and continue stirring until thoroughly melted.
7. Transfer to a large baking dish and top with toasted panko crumbs. Bake on top rack of oven for 20 to 25 minutes. Place a cookie sheet underneath it while baking so the bottom doesn’t burn.
