There have always been certain recipes that I've filed away in my  mind as "only for special occasions"...which means I rarely make them, and, unfortunately they are very often dishes that would make most folks' favorites list. Odd, isn't it? These "special occasion" dishes are usually time-consuming, expensive to make, labor- intensive, or some combination of all of these! One such meal that I rarely make, although we love it, is lasagna.

Lasagna Soup and Garlic Bread

Well, with the start of fall and the chill that arrived with it, I've been making soups. One soup recipe that I had never attempted was Lasagna Soup. Honestly, at first I wasn't sure it even sounded good, but the idea of a soup that would taste like lasagna was too tempting to pass up...and, thankfully, I didn't! 
I found that my adapted version of Paula Deen's, Tastes Like Lasagna Soup was easier to make than traditional layered lasagna and I honestly did not miss anything flavor-wise, either! Once the dish was completed, it was more like regular lasagna than it was a soup (not much broth/liquid to it). Nevertheless, it was delicious! I'm not sure I will ever make regular lasagna again after seeing how easy and delicious this new favorite is. 

Ingredients  (as I prepared it) 

1 lb. Italian sausage  
1 chopped onion
1 chopped green pepper
2-3 T. Extra-virgin Olive Oil 
5 cloves of minced garlic
1 t. thyme
1 T. Splenda Brown sugar
1 - 32oz. box of chicken broth
15 oz. can tomato sauce
1 can diced tomatoes
2 t. Italian seasoning
1/2 t. salt
1 box lasagna noodles (broken into pieces)
3/4 c. Parmesan cheese   
 2 cups shredded mozzarella cheese
Fried turkey sausage, peppers and onion in a little EVOO
Fried the turkey sausage, peppers and onion in a little Extra Virgin Olive Oil.

  1. In a large skillet, combine turkey sausage, diced onion, diced bell pepper and minced garlic. 
  2. Cook over medium-high heat for 8 to 10 minutes, stirring occasionally until sausage is browned and crumbles. Drain, if necessary. 
  3. Add to stock pot ingredients.
  4. In a stock pot, add diced tomatoes, tomato sauce, Splenda brown sugar, broth, tomato sauce, then stir in Italian seasonings, thyme, and salt. 
  5. Bring to a boil over medium-high heat; reduce heat and simmer 20 minutes. 
  6. Add noodles, and simmer until noodles are tender.
  7. Stir in Parmesan cheese.

Lasagna soup just after adding the noodles.
Ladle soup into bowls, evenly sprinkle with mozzarella cheese.  Serve immediately.
