Chicken Noodle Soup...Healthy Comfort Food

There's nothing more soothing on a chilly day than a delicious bowl of homemade chicken noodle soup. It's like getting the best hug ever from a old friend. 
In my recipe search, for the Crazy Cooking Challenge, I found several I liked but the one I selected to try came from...Not So Perfect Housewife. Unfortunately, when I went back to learn more and to introduce myself and the challenge, I realized that there had not been a post since 2009. This makes me kinda sad. I loved reading about this family and her other recipes look really good, too. Being a newbie to blogging (almost 200 days!) and running into this silent blog makes me wonder what the average blog life is? Anyway, I digress....back to the challenge!

Homemade Creamy Chicken Noodle Soup

I made a few modifications to the recipe just because of what I had on hand and it still turned out awesome! We've even had it for lunch a couple of days and it was still yummy!

Creamy Chicken Noodle Soup

3-4 lb chicken
4 quarts of water
3 t. salt
3 chicken bouillon cubes
3 celery stalks, chopped
1/2 onion, chopped
3 large carrots, chopped
1 1/2 t. onion powder
1/2 t. poultry seasoning
1/2 t. sage
1 t. celery salt
1/2 t. pepper or to taste egg noodles
1 (13 oz) can evaporated milk  
1/4 c flour

[NOTE- I substituted 2% milk for the cream and added 2 cans of Cream of Chicken & Herb soup and omitted the flour] 

Directions: Add water, salt celery, onion, chicken, bouillon to a large pot and bring to boil. Reduce heat and let simmer for 1 1/2 hours. When the chicken is done, remove it from the pot to cool and de-bone. You may have to strain the liquid to remove any large pieces.
Add vegetables and spices to the broth. Depending on the type of egg noodles, you may need to add them at this time. If you don't add the noodles at the same time as the vegetables, cook the vegetables until tender and then add your noodles and cook according to package directions (approx 10 min.). After noodles are cooked, reduce heat so soup is no longer boiling. Add cream with flour to soup to thicken. Add chicken.
