I look forward to the Crazy Cooking Challenge each month...and so does my family! This month was especially pleasing to them since they LOVE anything chocolate! We've been fans of the moist, chocolaty, Hershey's Perfectly Chocolate cake for a while so I looked for blogs that had prepared and highlighted the recipe and chose my source using that approach.

I found the Hershey's recipe at Christy's blog, The Girl Who Ate Everything. (Isn't that just a great name for a food blog?!) The first things I noticed at Christy's blog were her outstanding photos! Just by looking at the pictures, I found several recipes I can't wait to try! Then her story about wanting a chocolate birthday cake and her hubby's preparation of it and the ensuing mishap was both endearing and humorous...they end up 'blowing it to smithereens.' You really should read the whole story!

(as adapted from the Hershey's Perfectly Chocolate Cake recipe on the cocoa box)
2 cups of Splenda Blend
1 3/4 c. self-rising flour
3/4 c. Hershey's cocoa powder
1 c. buttermilk
1/2 c. vegetable oil
2 t. vanilla extract
1 c. boiling water
Directions - Preheat the oven to 350 degrees. Grease and flour 9-inch round cake pans.
In a large mixing bowl, stir together sugar, flour, cocoa. Add eggs, milk, oil and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water, the batter will be thin.. Pour into prepared pans.Bake 30 minutes or until wooden toothpick comes out clean. Cool completely before icing cake.
1/2 c. butter
2/3 c. Hershey's cocoa powder
3 cups confectioners sugar
1/3 c. milk
1 t. vanilla extractDirections - In medium mixing bowl- melt butter then stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla.
