Lemon Creme Bars

My thoughts turn to lemony foods and beverages when the weather begins to warm up and the sun shines bright. I guess it's the bright lemon yellow color and the refreshing coolness of lemonade that cause that.  I turned to this particular recipe due to it's simplicity. You start with a oatmeal cookie mix and add the delicious lemon layer make a wonderful Lemon Creme Bar.

Lemon Creme Bars
I've already shown that we love lemons at our house with my Lemonade Bundt Cake and Lemony Sour Cream Pie.  Since I had already shared a cake and pie recipe, I thought I would do something different opting to make a bar recipe.
I don't know if you can find an easier recipe to make! Thankfully, the ease of making does not sacrifice taste because these bars are full of yummy oatmeal cookie and sweet lemony flavors. 

Lemon Creme Bars 

Ingredients
1 bag Betty Crocker Oatmeal Cookie Mix
1 stick of butter
1 egg
1 can Eagle Brand Sweetened Condensed milk
Zest of 2 lemons
1/4 cup lemon juice (equals about 2 lemons)

Lemon Creme Bars with Oatmeal cookie crust
for an added treat!
Directions - Prepare 8 inch pan with cooking spray and preheat oven to 350. 
Mix oatmeal cookie mix with butter using a fork until incorporated. Now add the egg and mix until crumbly.
Press 1/2 of the cookie mixture into the 8 in. pan to form the crust and bake for 15 minutes. 

While the crust bakes, mix the sweetened condensed milk, the lemon juice and the zest until it's thick. Spread over slightly cooled cookie crust. Sprinkle the remaining cookie mix over the top and bake for 15-20 minutes, or until cookie crumble has browned. 
Chill for about 30 minutes before cutting into bars.
