Slow Cooker Chocolaty Red Velvet Cake

I love my crock pots! I know Crock Pot is a brand of slow cooker, but, like many folks, that is what we've always called our slow cookers. It's what I got used to, and, as I get older, I realize this is what they call getting "set in your ways.' Guilty! Anyhow, I am always looking for new crock pot recipes, and I realized the other day that I had never baked a cake using my crock pot. I remembered pinning (see Pinterest) some dessert recipes for the crock pot, so I decided now is the time to try one!

One of the recipes was for a Slow Cooker Chocolate Cake by girlwhoateeverything that looked wonderfully easy and, of course, who doesn't like chocolate?  I didn't have a chocolate cake mix on hand so I decided to improvise with the cake mix I did have...Red Velvet. 
Red Velvet cake is essentially a chocolate cake colored red, so I knew this should work out well...and, as expected, the cake was great! It was so moist and a scoop of vanilla ice cream complemented it perfectly. You just can't beat the ease of crock pot cooking...and now baking!  

Crock Pot Chocolaty Red Velvet Cake

Ingredients
1 small box of Instant Chocolate pudding mix
1 box of Red Velvet cake mix
4 eggs
1 cup water
3/4 vegetable oil
2 cups of sour cream
1 cup milk chocolate chips

Grease your 4 quart slow cooker crock. In a mixing bowl, combine pudding mix, cake mix, eggs, sour cream, water, and oil. Beat until well blended. Stir in chocolate chips. 

Pour your batter into the greased crock and cook on low for 4 hours or until the cake is set. The cake will be moist and spongy. Remove the crock from the slow cooker so the cake will stop cooking. 
 
We topped ours off with a scoop of vanilla ice cream and it was yummy!
