1 box pasta (corkscrew, bow tie and large elbow each work well)
1 cup mayonnaise
1/4 cup red wine vinegar
1/4 cup Splenda (or sugar)
1/2 cup sunflower seeds (we've used both salted & unsalted)
1/2 cup crumbled bacon pieces (8 to 10 slices)
1 cup shredded cheddar cheese
1/4 cup diced green onion (or red onion...I use both)
3 cups chopped, raw broccoli (in small pieces)
- Cook pasta according to package directions. Drain and rinse pasta in cold water to stop the cooking. Place completely cooled pasta in large bowl.
- Add broccoli pieces, bacon, onion(s) and sunflower seeds to the pasta and toss.
- To prepare the dressing - whisk mayonnaise, red wine vinegar, and Splenda. Pour over pasta mix. Toss until coated. Refrigerate until chilled (if you can wait) for about 1 hour. Toss and serve.
