Sweet Garlic Chicken..an easy weeknight supper!

This is a quick and easy weeknight supper that my family really liked; maybe yours will, too. I love recipes that allow me to sit and relax while life's modern conveniences do the work. Simply pop this chicken recipe in the oven, and, in less than 30 minutes, you can enjoy a delicious supper. I used the microwave to bake the potatoes and the green beans cooked on the stove top while the chicken and potatoes finished up...definitely a 30 minute meal!

Sweet Garlic Chicken a 30 minute meal!



Sweet Garlic Chicken

1 boneless, skinless chicken breast per person
3 T. minced garlic (I used a minced garlic from a jar; if you use fresh minced garlic, saute it in oil until tender)
2 T. Sugar-Free syrup
4 T. brown sugar (we use Splenda Brown Sugar)
2-3 T. olive oil

Directions
Preheat the oven to 350° degrees. Grease a 9x13 casserole dish with the 3-4 T. olive oil.  Place the chicken breasts in the dish.
In a small bowl mix syrup, minced garlic and brown sugar. 
Brush garlic mix over chicken breasts, flip them and do the other side.
Bake uncovered for 10-15 minutes each side. Cooking time will vary according to size and thickness of the chicken. Cook until juices run clear or to minimum internal temperature of 165° F.

Green Beans with Onion and Bacon

This is a common side dish at our dinner table. It is so flavorful and easy to make! 
  • 1 large skillet with a thin layer of olive oil in the bottom. 
  • Add diced onions (med. onion) and saute until translucent. Now add crumbled bacon or bacon pieces*.  **On a day that we want to get dinner on the table in a hurry, we use pre-cooked Real Bacon Pieces rather than fry and crumble our own.
  • Finally, add a family-sized bag of frozen green beans. Turn the heat to medium and cover with a lid. Stir occasionally to insure the beans do not burn. The infusion of bacon and onion flavors make these beans a savory delight.
