Slow Cooker Chicken and Dumplings: Guest Post

I am excited today to be guest blogging for the Shady Porch. I am Scarlett from Scarlett's Excellent Adventures. What are my Excellent Adventures? The biggest one is being a wife and a stay-at-home mom to my little one. The next adventure on the list, is weight loss. I gained a lot of weight over the years, between infertility treatments, having a baby and nursing, and now is the time for me to lose it. In the weight-loss process I am learning to eat healthy and live a healthier lifestyle. My biggest challenge is how to eat well while having a toddler running around. My blog is centered around healthy foods and healthy cooking, all done in an easy way. If you come away from my blog saying, “Wow! I can DO THAT!” and maybe a few calories lighter, I feel I have done my job. Today, I am sharing a healthier, hearty fall recipe.  In the fall we look for comfort foods, and nothing is more comforting than a nice and hearty meal of chicken & dumplings.

A hearty meal of chicken & dumplings

I love Southern foods. I may be a Northern girl, but I am a Southern girl at heart. I knew I had come “home” when as a teenager, I traveled from the North to South Carolina. It was there I fell in love with hush puppies, fried okra and Cajun shrimp. This is where my heart (and my belly) belonged! When we got home I pestered my mom to make hush puppies. They were pretty much a disaster, but my love for the South and Southern style foods continued and I am immediately drawn to these recipes. I saw this fabulous Cracker Barrel “copycat” recipe on Pinterest from the Tasty Kitchen Blog and thought I might try it. 

I love chicken & dumplings. I have tried a few recipes and they all seem very heavy and pretty high in calorie count. I'm also not a fan of Cracker Barrel's chicken & dumplings, but I couldn't pass up this recipe, it just looked so good. As I reviewed the recipe, it looked rather involved. I wasn't sure I really wanted to make my own dumplings...from scratch. So I took the easy way out. Here is an easy, healthier version of chicken and dumplings – for the Crock-Pot!

1 lb boneless, skinless chicken breast
10 oz package of frozen mixed vegetables
5 oz package of frozen green beans (½ the package)
3 small carrots
24 oz chicken broth
1 package of Pillsbury Biscuits (or crescent rolls)

Peel and cut carrots. Place chicken, vegetables, and chicken broth in Crock Pot. Cook for 4-6 hours on high, or until done. Once chicken has cooked through, pull off marble sized pieces of Pillsbury Biscuit dough. Drop biscuit pieces into chicken broth. Leave cover off of Crock-Pot and continue cooking until dough is firm and not sticky. Enjoy! (adapted from Tasty Kitchen Blog)

An easy, healthier version of chicken and dumplings – for the Crock-Pot!
I really like that this recipe contains a lighter, chicken broth versus a cream based broth or sauce. I've also noticed that many chicken and dumpling recipes only include the chicken and dumplings, no veggies.
The first time I made this we noticed the lack, so we added veggies into the mix. This may make it closer to a pot-pie (I guess that's the Northern girl in me), but it is still delicious nonetheless. I hope you enjoy it!
