Pepperoni and Cheese Quesadilla

Want a 30-minute meal with all your favorite pizza flavors? Then add Pepperoni & Cheese Quesadillas to your menu. We've made homemade pizzas at our house for years now, and we like ours as well as any pizzeria we know. Granted, there are times when a pizzeria pizza is the call of the night, but not very often. We love the pizza's many flavors...which is evident in the collection of recipes I've already shared, namely Calzone Rolls, Pizza Pops, and Pizza Casserole. I thought I would add another recipe to your pizza-flavor rotation that makes a great snack or an easy dinner recipe and satisfies any pizza craving. Today, I am sharing the Pepperoni and Cheese Quesadilla.

[I am reluctant to specify measurements/amounts because pizza is so subject to personal preference. You might like double pepperoni or extra sauce, so the list includes the most basic ingredients we used.]


Ingredients:
10 inch flour tortillas
shredded mozzarella cheese
pepperoni slices
Parmesan cheese
Pizza sauce
Italian seasoning
Options: crumbled turkey sausage, small diced ham, sliced tomatoes, sliced onions, olives, banana peppers, jalapenos, crushed red peppers, etc. Whatever you like on your pizza is fair game for this recipe.

Directions:
  1. We used a large electric griddle to prepare our quesadillas but you can prepare them on the stove in a large skillet. Spray the griddle or the skillet with butter or olive oil cooking spray.
  2. Take one tortilla and spread the pizza sauce lightly, then add the pepperoni, Italian seasoning and finally the Parmesan and  Mozzarella cheese. Place a tortilla on top of the pizza ingredients and cook on griddle until the cheese melts and the bottom tortilla begins to brown. 
  3. Flip the tortilla and brown the bottom. Slice into wedges and serve warm with a ramekin of pizza sauce for dipping.
  4. Here is a tasty added step - After flipping one quesadilla, while the top was still hot, we spread more cheese and pepperoni on it and popped it into the oven on broil for a few seconds (see photo above).
