Chicken & Dressing: Slow Cooker

Everyone I know loves chicken and dressing (my brother calls it Thanksgiving 2.0.) It is a budget-friendly dish that is easy-to-make, regardless of preparation method, but I am sharing the easiest prep of all...with the slow cooker. Honestly, it's not that slow when you think about it. Once I decide on chicken and dressing for dinner, in about 5 minutes, it is on, and it is ready when the dinner hour rolls around 3-4 hours later. Meanwhile, other issues and projects around the house can be handled while dinner is being prepared.

Chicken & Dressing

3-4 chicken breasts, skinless, boneless
1 can cream of mushroom soup
1/2 cup chicken broth
1 bag of Herb Seasoned Stuffing
1/2 cup Greek yogurt or sour cream

  1. Spray your crock with cooking spray or use a crock liner.
  2. Place thawed chicken breasts in the bottom of the crock.
  3. Pour the bag of stuffing over the chicken.
  4. Mix the soup, yogurt and broth together and pour over the stuffing, spreading to cover evenly.
  5. Place the lid on the crock and turn it up to High and allow to cook 3 - 4 hours. If it is necessary to set up the meal earlier in the day, turn the crock to Low for 6 - 8 hours. 
  6. Before serving, remove the lid and give the dressing a stir to make sure the dressing has been properly moistened. At this point, if the dressing is still dry-ish, add broth to taste.
  7. If desired, remove the lid for 10-15 minutes prior to serving to allow the dressing to form a crusty top.        
Note - I am a stickler for food safety and I always temperature probe my meats. However, slow cooking on High for 3-4 hours is usually enough. For the record, when I checked this, it was about 180 degrees.
