Our Top 12 Recipes of the Year

It seems like each year flies by just a little more quickly, and I am always amazed at how much we created, re-purposed, baked, cooked, made, and shared here at The Porch in what seems like the blink-of-an-eye. Today's post features some of what was accomplished this year by counting down the 12 Most Popular Recipes of 2013. Compiling the list was a delightful trip down memory lane, which had me counting my blessings! It's been a good year. Last Minute Christmas Inspiration: Recipes, Crafts, Gift Ideas & Decorations!

First, (I hope you don't get tired of this!) a heartfelt thank-you to all the participants of this year's Holiday Party! I hoped to see a party that ran a wide gamut...and WOW does it ever...thanks to you! I am so tickled by the wonderful variety of projects; the scope really makes a nice Pinterest board - which is growing in popularity!

Country Breakfast Casserole - Eggs Biscuits & Gravy

This hearty Country Breakfast Casserole is very similar to the Easy Biscuit Breakfast Bake with the added feature of sausage gravy! It has everything for a big Country Breakfast in one casserole dish. It is a flavorful option for a relaxed morning meal, or you can make it the night before, refrigerate it, and pop it in the oven when you rise in the morning. It's my favorite kind of breakfast...easy and delicious.

One Dish Breakfast...Eggs, Biscuits & Sausage Gravy!


Ingredients -
2 cans of biscuits
2 1/2 cups cooked sausage, crumbled or a bag of pre-cooked turkey sausage
6 slices cooked bacon, crumbled or 1 bag of real bacon pieces

1/2 cup milk
2 cups of heavy cream (*see substitute recipe below)
6 eggs
2 packages of Sausage-flavored Country Gravy Mix, or a pre-made sausage gravy like Tennessee Pride.
1 1/2 cups shredded cheddar cheese
Salt & pepper to taste

They even loved the leftovers the next day!
Directions:
  • Preheat oven to 350 degrees. 
  •  Spray a 9x13 casserole dish. (Melting 1/2 stick of butter in the pan instead of using the spray would also serve.)
  • Cut biscuits in half and layer in the bottom of the casserole dish. [If you use Pillsbury Grands, or any other large biscuit brand, cut into thirds. Be sure to use a larger dish to minimize the chance of overflow as the biscuits rise.]
  • Add the layer of cooked, crumbled sausage.
  • Whisk eggs, cheese, milk, heavy cream, salt and pepper together, then pour over the sausage layer.  
  • Make the gravy according to package directions and pour evenly over the egg layer.
  • Bake until the casserole is set [the middle is no longer jiggly]. This can be anywhere from 45-65 minutes. In my wonky oven, it was ready before the hour was up. 
  • Before serving, sprinkle the top with the real bacon pieces. 
*Substitute recipe for heavy cream  - if you do not have heavy cream available, simply mix 1/3 cup of butter and 3/4 cup of milk

Pecan Sticky Buns: Slow Cooker

I love using my slow cooker for dinner recipes, but I want to learn more about preparing breads and breakfast options, so I will be sharing my experiences as I learn. 
For dessert tonight, the experiment was to make Pecan Sticky Buns in my slow cooker. I usually bake them in my cast iron skillet, so this was a great departure from my regular practice. 
These Pecan Sticky Buns were great for dessert, but preparing them in a slow cooker really only makes sense if you want them ready for breakfast. A programmable slow cooker or a lamp-timer (like you would use on Christmas tree lights or when you go on vacation) would permit an unattended start to the process, so the rolls would be ready when you want to serve breakfast. Several times each year -and particularly around holidays - we have a houseful that calls for a large quantity breakfast. A fresh, hot, cinnamon pecan sticky bun would be a terrific start to a big family meal, especially with a cup of hot coffee.

Now that we've celebrated Thanksgiving, we're are on a fast track to Christmas. Chicken & Dressing: Slow Cooker

Everyone I know loves chicken and dressing (my brother calls it Thanksgiving 2.0.) It is a budget-friendly dish that is easy-to-make, regardless of preparation method, but I am sharing the easiest prep of all...with the slow cooker. Honestly, it's not that slow when you think about it. Once I decide on chicken and dressing for dinner, in about 5 minutes, it is on, and it is ready when the dinner hour rolls around 3-4 hours later. Meanwhile, other issues and projects around the house can be handled while dinner is being prepared.
