Crumb Top Banana-Orange Bread

This delicious Crumb Top Banana-Orange Bread is a great way to start the day, grab a snack, or finish a meal. I like this recipe because of the wholesome ingredients it calls for - oats, nuts, honey, orange juice, and bananas.  Honestly, this bread is delicious and beats those quick, easy, unhealthy choices like donuts and toaster strudels.  We used our loaf pan this time, but this recipe is ideal for muffins too.

Crumb Top Banana-Orange Bread

Crumb Top Banana-Orange Bread

1 cup of self-rising flour
2 cups of "quick" oats
1 cup mashed banana
2 eggs
2 T. vegetable oil
1/2 cup orange juice
1 T. orange zest
1/4 cup honey
1/4 brown sugar
1/c pecans or walnut pieces, if desired

Crumb Topping
1/2 cup butter, melted
1 t. orange zest
1/2 cups oats
1/2 cup brown sugar
1/2 cup flour
Mix ingredients until combined. Mixture will be crumbly. Set aside.

  1. Spray loaf pan with cooking spray. Preheat oven to 350 degrees.
  2. In a medium mixing bowl, combine flour, oats, brown sugar, nuts, and orange zest. 
  3. Now add the eggs, oil, honey, orange juice, and mashed banana; beat well until incorporated. 
  4. Pour the batter into loaf pan or muffin tin. 
  5. Mix the Crumb Topping and spread it over the bread batter. 
  6. Bake for 35-45 minutes or until a toothpick inserted in the center comes out clean. If you are making muffins, adjust your bake time accordingly.
  7. Cool for 10-15 minutes before slicing.
