Pork Sliders with Honey-Mustard Aioli

Slow cooker pork tenderloin is tender and juicy, but has a limited flavor (in my opinion) unless marinated, rubbed, or paired with a sauce. Today I am sharing my homemade honey-mustard aioli, which is great with burgers, salmon, grilled potatoes and/or grilled chicken sandwiches, as well as today's featured dish - the pork tenderloin slider.

Honestly, there are days when the slow cooker is my best friend... days when spending the time in the kitchen preparing meals just doesn't fit my schedule, or (maybe) my mood. On those occasions, I say a prayer of thanksgiving for my slow cooker. This recipe for slow cooker pork sliders and honey-mustard aioli (mayonnaise sauce) comes together quite quickly and is really delicious. Though, in this case, it was for a regular meal, it would be ideal for larger gatherings, too.

Slow Cooker Pork Tenderloin
1 1/2 - 2 lb - pork tenderloin
1/4 cup water in slow cooker
Honey-Mustard Aioli
1 cup mayonnaise 
2-3 Tablespoons deli or dijon mustard 
2 teaspoons minced garlic
2 teaspoons honey 
salt & pepper

Pork Tenderloin Directions: Grease the slow cooker or use a crock liner to make cleanup easier. Wash and trim the pork tenderloin (remove the silver). Pat dry and season lightly with salt and pepper. Place pork and water in the slow cooker.
Cover and cook on High for 3-4 hours (or on Low for 6-8.)
Temperature probe should register 145 °F.
Slice or shred the pork for the slider buns. Serve & Enjoy 
Serves 6 - 8, depending on slices or shredding.

Aioli Directions: Whisk ingredients together and taste test. 
NOTE - I have never measured the ingredients, so this is a good starting point and, from here, it's taste-as-you-make-it. You'll know when it's right!
