3 lbs browned ground sirloin or ground beef
2 lbs cubed Velveeta cheese or any smooth textured, easy to melt cheese (cubed or shredded)
2 cups of chunky salsa*
1 T. chili powder
1 can refried beans or hot chili beans, if desired
White Corn Chips
Optional Toppings (as desired) - Diced: green onions, white onions, tomatoes, jalapeno peppers, banana peppers. Also, whole kernel corn, shredded Mexican blend cheese or sharp cheddar, shredded lettuce, sour cream, olives, guacamole slices, and/or cilantro.
Directions: After frying the ground beef, add it to the slow cooker crock with the chili powder, cubed Velveeta, and the chunky salsa and cook on high for 3 hours. I stirred it hourly until all of the cheese had melted and the ingredients were well blended.
- if you like your nacho mix thinner add more salsa
- if you like your food extra spicy you can do that several ways with this recipe. The most obvious would be to use a hot chunky salsa or Ro*Tel® or the spicy flavored nacho chips. Of course, you can also use hot toppings like jalapeno peppers or red pepper flakes too.
The hubby likes to put the chips in a bowl and then the nacho mix in a separate bowl and he dips his chips. Everyone else likes to put a layer of chips on their plates and then spread the nacho mix and various toppings over the chips...either way is great so enjoy.
