Easy Homemade Chicken Taquitos

We have enjoyed frozen taquitos as a tailgating or movie night snack, but, like so many things...nothing beats homemade! The store-bought variety just lost a household and we can make the filling any way we want! Our version - Homemade Chicken Taquitos. Tasty, easy to make, and SO versatile - can be served as a snack, appetizer or a meal (We went meal for this one!). I used soft taco-sized flour tortillas (traditionally, this is a corn tortilla preparation) because I was making a dinner portion. The corn tortillas are smaller and not quite as ready-to-roll as the flour ones,  so you can choose what you prefer. We served ours with white corn chips, cheese, and salsa as a side but re-fried beans or a Spanish rice are also great options.

Cheesy Chicken Taquitos

pkg of medium-sized flour tortillas
3 cups shredded chicken breast (2 chicken breasts)
1 can of corn, drained
1 pkg of taco seasoning
1-10oz. can of diced tomatoes and green chiles (mild or hot)
2 cups of shredded Mexican cheese blend
1 medium onion, diced
1/2 c. salsa or picante sauce
1-2 c. of oil for frying (I used vegetable oil)
Options for serving - sour cream, guacamole, salsa
  1. In a bowl, mix shredded chicken, onions, corn, taco seasoning, diced tomatoes and cheese. 
  2. In a large skillet, heat oil until hot. 
  3. While the oil is heating, fill tortilla with about 3-4 tablespoons of chicken mix; roll tightly and use a toothpick to secure.
  4. Fry taquitos in batches to a nice golden brown. Remove from oil and place on paper towels to drain. Replenish with fresh oil after each batch. 
  5. Place taquitos on a serving platter with salsa, sour cream and/or guacamole.
