|Cheese Tortellini Soup...certainly on the comfort food list!|
2 bags of frozen cheese tortellini
2 large boxes or cans of chicken broth (2 - 32 oz. boxes)
1 medium onion, diced
1 red bell pepper, diced
2 T. minced garlic
2-3 T. olive oil
1 T. dried parsley or 1 bunch fresh parsley (fresh parsley should be finely diced)
salt and pepper, as desired
1. In a large soup pot, saute the onions and red bell pepper in olive oil until soft. Add minced garlic and parsley, cook for another minute or so.
2. Add the chicken broth to the soup pot with the sauteed vegetables and put a lid on it. Heat to boiling.
5. Sprinkle with Parmesan cheese, as desired.
Makes 4-6 servings.
