Chicken Alfredo Tortellini

As you know, I share recipes that I've first prepared for my family. Of course, I only share the old family favorites and the new menu hits (believe me, there are some duds that I don't waste your time with). Well, I recently had a new menu hit- Chicken Alfredo Tortellini! Tortellini is a relatively new favorite around here, but I've been trying different recipes that feature it (remember my roundup of 13 Easy & Delicious Tortellini Recipes?) We love the cheesy flavor of alfredo sauce, and, when I thought about pairing it with cheese tortellini, I knew it would be the cheesiest delicious pasta dinner ever and it was Oh, so good!

Ingredients:
2 bags frozen cheese tortellini
Homemade Creamy Alfredo sauce or 1 jar of Alfredo sauce    
1 bag frozen broccoli pieces, optional
2 baked or boiled chicken breasts, shredded
1/2 c. Italian bread crumbs, optional

Directions:
    1.  Prepare the alfredo sauce, either by heating the contents of the jar or following the recipe. Time is usually the deciding factor for me.

    2.  Bake or boil chicken breasts. Shred the chicken and set aside.
    3.  Heat frozen broccoli, according to package directions.  4.  In a medium saucepan, fold shredded chicken into alfredo sauce.  If the sauce is too thick, add 1/4c. milk or 1/4c. of pasta water until the sauce has the desired consistency.
    5.  Boil tortellini according to package directions. Drain and return to pot.

    6.  Add the alfredo sauce to the tortellini and toss to coat. 
    7.  You can add the broccoli to the sauce or allow everyone to add their own to the mix, as desired. I added the broccoli to the  sauce.
    8.  Transfer to a casserole dish, sprinkle the top with Italian bread crumbs, and bake at 350 degrees for 15 minutes. 

    NOTE: The final step is optional...sometimes the saucy tastiness does not need a crunchy, toasted topping.
