Garlic Mashed Potatoes

We love a good slow cooker meal and the other day I prepared Slow Cooker Pesto Garlic Chicken and as a side dish I made Garlic Mashed Potatoes. Since I was already cooking the main meal in the slow cooker I thought why use the stove or oven to prepare the mashed potatoes? So I just wrapped the potatoes in foil and put them the slow cooker with the chicken, garlic and onions. Win! 
These potatoes are really delicious...really full of flavor. My brother had the leftovers the next day for lunch and commented how good they were.

Garlic Mashed Potatoes

Ingredients:
3-4 large potatoes
10-15 garlic cloves, roasted 
1/2 - 3/4 c. sour cream
3-4 T. butter
salt and pepper to taste

Directions:
  1. Wash and pierce the potatoes, then wrap them in foil before placing them in the slow cooker. 
  2. Break up a garlic head (do not peel). Add the separated garlic cloves (10-15) to slow cooker with the potatoes.
  3. I cooked the potatoes and Slow Cooker Pesto Garlic Chicken on High for about 5 hours. Once cooked, I removed the potatoes from the crock and unwrapped them from the foil.

  4. In a large bowl, break up one potato at a time using a masher or fork. 
  5. Using a mixer, beat the potatoes to break them down further.
  6. Squeeze the garlic cloves out of the skins and into the potatoes and beat the potatoes to incorporate.
  7. Add sour cream, butter, salt and pepper, beat until the potatoes are creamy and have minimal lumps.
Tip - Add a couple tablespoons of milk at a time to get the potatoes to a creamy texture, if necessary. If you are making the Pesto Garlic Chicken, as I did, use the garlic broth from the crock instead of milk to really increase the flavor.

    Note - We no longer peel our potatoes since learning most of the nutrients are in the potato skin.
