Slow Cooker Pesto-Garlic Chicken

This easy-to-make/easy on the budget/time friendly recipe for Slow Cooker Pesto Garlic Chicken has just 4 ingredients. Don't you love recipes that are frugal, simple, and demand little time, but create a meal that feels special? I do! It's like having Sunday dinner on a Monday: boneless chicken breasts, along with garlic mashed potatoes and green beans. (Psst! I used the garlic that cooked with the chicken to make my mashed potatoes.)
Platter of Slow Cooker Pesto-Garlic Chicken

2-3 T. basil pesto
3-4 chicken breasts, boneless, skinless
1 bulb garlic, separate cloves but do not remove the skins
1 onion, sliced

    Spray slow cooker crock with cooking spray.
    Place the onion slices in the bottom of the crock. 

    Coat the top of each chicken breast in the pesto and place them on top of the onion slices.
    Place the garlic cloves (skin on) around the chicken.

    Cook on high for 3-4 hours or on low for 6-8 hours.
    Remove chicken, garlic cloves and onions from crock with a slotted spoon. Place on server. 

      Keep the garlic cloves for a future recipe. For example, Aioli, soup, sauces, dressing, garlic bread, and/or mashed potatoes.

      TIP - I wrapped 4 potatoes in foil and placed them in the crock on top of the chicken and cooked them right along with the rest of dinner. Afterward I had options...mashed or baked potatoes for a side dish? I opted for mashed and used the garlic to make Sour Cream - Garlic Mashed Potatoes. Mmmm!
