The Shady Porch: Strawberry Cream Cheese Pie

Strawberry Cream Cheese Pie

Fresh Strawberry Cream Cheese Pie is creamy, delicious, and easy-to-make. It is a great dessert for summer since the berries are in season...fresh is best. I love this pie for our cookout gatherings since I can prepare it ahead of time and refrigerate it until the big day. This recipe can be adapted and prepared year-round using canned pie fillings. Honestly, I'm glad I don't have to choose which I like better...strawberry or blueberry. Psst - I have used both on the same pie for a patriotic presentation on occasion as well!

2 - 8oz. bars of cream cheese, softened
2 containers of Cool Whip
2/3 c. sugar
2 cups strawberries - rinsed, sliced, sweetened
1/2c. - 1cup Strawberry Jam (quantity depends on thickness of spread)
(This recipe makes 2 pies)

Directions:
  1. Whip the cream cheese, sugar, and 1.5 containers of Cool Whip until fluffy.

  2. Spoon cream cheese mix into graham cracker pie crust and spread evenly.
  3. Heat strawberry jam in microwave until easily stirred (30-40 seconds at a time).
  4. Spread jam evenly over the surface of the pie. Layer fresh sliced strawberries over the jam.
  5. Cover and chill for at least an hour.
  6. Before serving, top with a dollop of Cool Whip (from the unused 1/2 container), if desired.
Note No pie crust? No problem! Just layer into dessert glasses and serve parfait style!
