Baked Breakfast Tortillas

First, I have a quick breakfast, brunch, or snack for you today: Baked Breakfast Tortillas. It is dee-lish and easy-to-make, both features I like, especially in the morning! Also, this recipe can be tailored to your family's tastes, or just change it for variety from time-to-time. You can vary the cheese or the breakfast meat (bacon, sausage, cubed ham, etc.) or add vegetables like peppers or chilies to spice things up...the possibilities are wide open. I hope you enjoy it.


Baked Breakfast Tortillas & Giveaway!

Baked Breakfast Tortillas

Ingredients:
6 tortillas
scrambled eggs (6)
shredded cheddar cheese
breakfast meat (bacon/sausage/ham)
[other options - diced bell peppers, tomatoes, and/or onions, green chilies, salsa]

Directions:
1. Preheat oven to 400 degrees. Wee skipped this, but, to ease clean up and prevent sticking, you can line cookie sheet with parchment paper.
2. Take one tortilla at a time and add a line of scrambled eggs down the center of the tortilla.

3. Sprinkle shredded cheese, choice of breakfast meat(s), other filling options over the egg.
4. Fold tortilla in half over the egg-cheese mix and roll tightly.
5. Place rolled tortilla on cookie sheet edge side down.
6. Bake until cheese has melted and tortilla is crisp. 
7. Serve warm (Could cut into bites, or with a dollop of sour cream for dipping, or salsa)
