Homemade Hot Dog Chili aka Coney Sauce

There are few things identified with a single season...fir trees and Christmas, eggs and Easter...but none, in my mind, is as connected with a season like hot dogs are with summer. From cookouts to ball games, the hot dog is the sandwich of the season, and, here on the Porch, a hot dog is not a hot dog without chili.
The best things on any table are homemade, and the same is true with hot dog chili (or hot dog sauce) here at the Porch.

Homemade Hot Dog Chili aka Coney Sauce


Ingredients:
1 lb. ground beef (ground turkey, ground sirloin, etc)
1/2 cup onion, minced
1 cup ketchup or half of a 6 oz. can tomato paste
1 cup water
2 T. Worcestershire sauce 
1 T. chili powder 
1 T. mustard
1/2 t. salt, if desired 


Directions:
  1. In a large skillet, cook the ground beef and onion until thoroughly cooked. Drain. 
  2. Stir in ketchup, Worcestershire sauce, water, chili powder, salt and mustard. 
  3. Simmer uncovered for 10-15 minutes until sauce thickens, stirring occasionally.
Note - if sauce gets too thick, simply thin it with water until it's the consistency you desire.  
TIP - If the sauce is too tomato-y for your taste, add a teaspoon of sugar. Repeat, if necessary until the sauce flavors mellow to your liking.
