Savory German Noodles with Smoked Sausage

Our street has several unique characteristics. One is that, to be as close as it is to one of the busiest intersections in the area, it is really quiet. Another is that hubby and I are the youngest people on our block. One day, my 86-year-old neighbor, Jean, called to tell me about a dish she remembered having loved as a child, called German Noodles. She said it was like German Potato Salad...but without the potatoes. Well, if there is an upgrade from potatoes around here, it is noodles! I couldn't wait to try it, but, just before I started cooking, I decided to make one change: I replaced the bacon in the original for smoked sausage.

We loved this new dish! It is so full of flavor and so filling!

Ingredients:
1 bag egg noodles
1 pkg. smoked sausage, cut into coins
1/2 of large onion, diced
2 T. sugar
2 T. flour
1/4 t. salt
1 t. ground mustard
1 cup water
1/2 cup cider vinegar
1 cup celery, chopped
2 T. parsley, chopped (optional)

Savory German Noodles with Smoked Sausage Ingredients

Directions:
    Cook noodles according to directions on package.

    In a skillet, cook sausage. Set aside.
    Using the sausage grease cook the onion until tender.

    In same skillet, stir together sugar, flour, salt, and mustard. Gradually add water and vinegar, stirring continually. 
    Cook and stir until thick and bubbly, about 2-5 minutes.

    Rinse and drain noodles; pour into skillet. 
    Add sausage, parsley, and celery. 
    Heat through; pour into serving bowl.
