Corn Salsa...serve on Fish Tacos or as a side dish!

Today's corn salsa recipe is another treat that mainly comes fresh out of the garden. Of course, all of the ingredients are available at your local grocer or farmers' market as well. This Corn Salsa is great, as shown here, on fish tacos and most Mexican dishes, and it is especially good with BBQ. Further, it makes a delicious side dish to nearly any meal; I ate it with my bologna sandwich for lunch yesterday, and the hubby, who was having sliced chicken breast, spooned a liberal serving over the slices. The perfectly seasoned vegetables have just the right mix of sweet with a peppery crunch. It only takes minutes to make and can be served immediately or chilled for later.

1 1/2 cups fresh whole kernel corn (if using canned, drain fully; if using frozen, cook according to directions)
1 1/2 cups cabbage, finely chopped
1 1/2 T. lime juice
1 red bell pepper, diced
1 green bell pepper, diced
1/2 cup onion, red or white, diced
[Additional options - diced jalapeno, and/or fresh cilantro]

1. In a large salad bowl- mix corn, cabbage, onion, peppers, lime juice until well combined.
2. Season with salt and pepper, as desired. (We shook some dried cilantro over ours as well.)
3. Chill until ready to serve.
