Homemade Creamed Corn: easy and delicious

This recipe evokes memories of my Nana's dinner table. She often had a skillet of corn cooking on the the stove top at suppertime.  This Homemade Creamed Corn recipe is easy to make and truly delicious..."good, ol' fashioned, down-home eatin'" is what we call it. I am not a fan of canned creamed corn, but this recipe is among my favorite side dishes!

Down Home Good Eatin'...Pork chops, Party Beans and Homemade Creamed Corn



Ingredients:
2 - 12 oz. bags frozen whole kernel corn *see note
1 stick of butter
1 cup of half and half or heavy cream
salt and pepper, to taste
Additional Options - diced bell peppers, green chilies, diced green onions, shredded cheese, diced white onions 


*NOTE - if you have fresh corn...cut it off the cob (about 4 cups) and use it! Canned corn works as well, use 2-3 cans, drained.

Directions:
1.  Melt 1 stick of butter in large skillet.

2.  Add corn to the melted butter, and cook until thawed.

3.  Stir in half and half; cook until corn is cooked through.

Simmer until the corn is cooked and the half and half cooks down some.
