Chinese Beef & Peppers

This is an easy 20-minute, one-skillet meal that will be a blessing instead of a burden for the harried cook. The family will be equally blessed with this hearty, flavorful dish. The recipe is simple with a savory sauce that complements the meal perfectly. A bed of Chinese noodles or rice makes it a complete meal that satisfies any appetite.

Ingredients:
1-2 lbs sirloin, thinly sliced*
4 green peppers, sliced into strips
3 medium onions, sliced
4-5 green onions, diced
3-4 T. oil (I use olive oil)
3 T. minced garlic
1 cup beef broth
2 T. soy sauce
1 T. beef granules or 3 bouillon cubes
3 T. corn starch or flour
1/8 t. black pepper
water
*[Hint - if you have to slice the beef yourself. Put it in the freezer for about an hour ahead of time and it will make the job much easier...the butcher at our grocery store gladly slices ours when asked]


Directions:
1.  Heat oil in large skillet (I use my electric skillet at 375°F). Add peppers, onions, green onions and minced garlic. Cook about 3 minutes, stirring occassionally.

2. Add beef and cook until done.

3. Sprinkle flour or corn starch over the beef - vegetable mixture and stir to incorporate.

3. In large measuring cup or bowl, mix broth, soy sauce, black pepper, and beef granules then slowly stir into the skillet mixture.

4.  Stir and cook until sauce is thickened, about 4-5 minutes. If sauce is too thick, add water or more broth in 1/4 cup measurements until you get the desired consistency.  We like more sauce so I usually add about a 1/2 cup of water. Serves 4.



We serve this on a bed of rice or Asian noodles. It's Delish!
