Rustic Italian Chicken: Slow Cooker

Signs of autumn are already here though, according to the calendar, it's still a week away. For example, we're painting, caulking, and swapping late garden harvest with the neighbors. Such activity means we are using our slow cooker frequently. Recently, I tried a new recipe called Rustic Italian Chicken that filled the house with a wonderful aroma. No matter who came through the door, the very first words were about how delicious it smelled; once dinner rolled around, the flavors delivered on the aromatic expectations. It is a rustic Italian meal that's delicious, comforting, and economical (boneless chicken thighs are WAY less expensive than boneless chicken breasts!).

Rustic Italian Chicken: Slow Cooker
A rustic Italian meal that's delicious, comforting and filling.
Slow Cooker Rustic Italian Chicken

2 lbs boneless, skinless chicken breasts
2 carrots, sliced into 1/2 in. rounds*
1 bell pepper, chopped*
1 pkg fresh mushrooms, sliced*
4 garlic cloves, minced
2 T. Italian seasoning
salt and pepper to taste
1 can of Red Gold® Diced Tomatoes
2 (15 oz) cans of Red Gold® crushed Tomatoes
3 cups of pasta of choice, cooked and drained
[*Note - I did a few things differently...I fine chopped the carrots and bell pepper in a blender and I used a pkg of whole mushrooms.]

1. Spray slow cooker with cooking spray. Place chicken thighs in the bottom of the slow cooker and top with the remaining ingredients, except the pasta. 

2. Cover and cook on low for 6 to 8 hours or on high 4-6 hours. I always temperature probe meats and the chicken should be at 165 degrees minimum. Serve chicken over pasta.
Garnish options - Parmesan cheese, Red pepper flakes, chopped fresh basil.
