|A rustic Italian meal that's delicious, comforting and filling.|
2 lbs boneless, skinless chicken breasts
2 carrots, sliced into 1/2 in. rounds*
1 bell pepper, chopped*
1 pkg fresh mushrooms, sliced*
4 garlic cloves, minced
2 T. Italian seasoning
salt and pepper to taste
1 can of Red Gold® Diced Tomatoes
2 (15 oz) cans of Red Gold® crushed Tomatoes
3 cups of pasta of choice, cooked and drained
[*Note - I did a few things differently...I fine chopped the carrots and bell pepper in a blender and I used a pkg of whole mushrooms.]
1. Spray slow cooker with cooking spray. Place chicken thighs in the bottom of the slow cooker and top with the remaining ingredients, except the pasta.
2. Cover and cook on low for 6 to 8 hours or on high 4-6 hours. I always temperature probe meats and the chicken should be at 165 degrees minimum. Serve chicken over pasta.
Garnish options - Parmesan cheese, Red pepper flakes, chopped fresh basil.
