The Shady Porch: Pasta with Meat Sauce

Pasta with Meat Sauce

When this pasta meat sauce is simmering on the stove, the aroma is so wonderful, you might feel you have been transported to a Tuscan kitchen. I suppose it's the combination of garlic, olive oil, and basil pesto simmering slowly in base of diced tomatoes. As the hubby arrives home, he comes through the door, calling, "Wow, it smells good in here!" Happily, we're equally pleased with the remarkable flavor. Whether winding spaghetti or piercing ziti, this savory sauce is delicious, and still is a favorite should you decide to enjoy a meat-free version. It takes little time to prepare and it's well worth the effort for that authentic Italian taste.

Pasta with Meat Sauce

1 lb lean ground beef or ground sirloin
1/4 cup olive oil
1 T. basil pesto
1 T. minced garlic
1 can diced tomatoes, (I use garlic-basil-oregano flavored)
1 lg. can tomato sauce (24-30 oz.)
1/2 cup onions, diced (optional)
1 cup mushrooms, sliced (optional)
1-2 bell peppers, diced (optional)

1.  In a large skillet, cook and stir ground beef, onion, mushrooms and bell peppers until ground beef is cooked through. Drain grease.
2. Add minced garlic, olive oil, pesto, diced tomatoes and tomato sauce. Turn to low heat and allow to simmer while the pasta cooks and you prepare a salad or garlic bread.
3. Serve over your favorite pasta, topped with a generous sprinkle of Parmesan cheese, if desired.
