Cheesy Ranch Corn Dip

I looked around the room the other day, during a game day gathering, and folks were eating the dip with forks - like it was a side dish - because the veggies, chips, and crackers did not hold a big enough bite. That, my friends, is a gooood dip! This Cheesy Ranch Corn Dip, full of fresh flavor from the corn and peppers with the savory addition of Ranch seasoning, is a great complement to crunchy fare, or (apparently) just as a snack itself. This quick delight comes together so easily that the cream cheese requires more time to soften than is needed to actually make the dip. 

Cheesy  Ranch  Corn Dip
Cheesy Ranch Corn Dip...goes great with crackers, chips, and veggies!


1 red bell pepper, diced
1 can diced green chiles, drained*
1 can of whole kernel corn, drained
2-8oz cream cheese, softened
1 packet Hidden Valley Ranch dip seasoning mix
*spice it up by substituting the green chiles for diced jalapenos

  1. In large mixing bowl, mix all the ingredients together (I used a mixer on low). 
  2. Chill until ready to serve.
  3. Serve with chips, crackers and/or raw veggies.
