Strawberry Cream Cheese Pie

Fresh Strawberry Cream Cheese Pie is creamy, delicious, and easy-to-make. It is a great dessert for summer since the berries are in season...fresh is best. I love this pie for our cookout gatherings since I can prepare it ahead of time and refrigerate it until the big day. This recipe can be adapted and prepared year-round using canned pie fillings. Honestly, I'm glad I don't have to choose which I like better...strawberry or blueberry. Psst - I have used both on the same pie for a patriotic presentation on occasion as well!

Party On The Porch: Hints, How-Tos, Recipes and more

Although it's been unseasonably warm this week, we've really started enjoying evenings on the Porch. (I had hoped to catch a glimpse of the meteor shower this weekend but, unfortunately, although skies were clear, I didn't see any.) I just love this time of year. The flowers are blooming, and the garden is looking good. It appears that the 7-ft. net fence we erected is working, successfully keeping our pup, the rabbits, and any deer out...for now.

Waldorf Salad...Crunchy and Creamy

To my mind, salads are nearly as great as casseroles and crock pot dinners. There are so many fantastic salads; they are a lot like soup in that you can throw nearly anything in them and have a winner! This recipe for Waldorf Salad looks like it was created by someone who just kept throwing things together until they won! My gran would make Waldorf Salad for special gatherings, but it became so popular that you could find a bowl in the refrigerator on a regular basis. I don't eat many apples (unless of course, there is an awesome dip involved), but I love their crunchy sweetness in this salad; Waldorf Salad is a winning combination of sweet and savory, crunchy and creamy.

12 Delicious Cookout Favorites - Sweet & Savory

I always get excited this time of year...Memorial Day is here, the hubby's summer vacation is about to begin, and family birthdays, graduations, and boot camps are coming up. All of these things point to family cookouts...although we're not a big family in numbers, we like to do things up BIG - we plan outdoor game tournaments, I usually cook WAY too much food, and, on occasion, we are treated to a friendly visit from our local police (I'll tell you the story at the end of the post). I love serving old family favorites, and I always make some new recipes to test them on the family as well! This week, I am sharing some of our delicious cookout favorites from here at the Shady Porch.

Party On The Porch: Crafts, Cuisines & Clever DIYs

Hi All! 
It's been another busy week around our old Kentucky home. Lots of planting still taking place...flowers, berry bushes, and, of course, more veggies, too. The biggest change is virtually invisible: a new 7-foot fence surrounding the vegetable garden. The fence is of a material so thin, it cannot be seen until you are right up on it. We are also hoping it will help deter the deer this year. Also on the prowl for the garden's bounty - this year a family of bold bunnies have taken up residence the neighborhood.  The other day, two of  bunnies were sitting across the street and appeared to be watching...and waiting for us to look the other way so they could come across and help themselves to our salad bar (sad, funny, and true!).
The weather has been really great for the early starts, so, if we can derail the plans of the local raiders, we are expecting abundant produce from our little pea patch on the hill.

I thought our Porch Party was another great success. I am always in awe of the great information that can be gleaned from your party posts... natural home remedies, how to transform a table to a beautiful ottoman, how to restore a clawfoot tub on a budget, and how to make a self-watering planter , as well as how-tos for better baconbrats, and burgers (just in time for summer grilling).

Loaded Potato Boats

The other day, I doubled up the use of my slow cooker by placing foil-wrapped potatoes on top of the Garlic-Pesto Chicken dinner I was preparing. It sure worked for me - keeping the kitchen cool in 90 degree weather is a good thing. So, when I wanted to bake potatoes for these Loaded Potato Boats, I used my slow cooker again. The slow cooker is just as useful in the summer as it is in the colder months, and, according to my research, uses less energy (and costs less money) than my electric oven for baking potatoes...even though it takes more time. Double cool! (get it?) The loaded potato boats made a great side dish to our Philly Burger  meal and, since they're so easy to make, I can see making a (ahem) boatload (ha! I'm on a roll now!) of them for our next big Game-day gathering.

Chicken Alfredo Tortellini

As you know, I share recipes that I've first prepared for my family. Of course, I only share the old family favorites and the new menu hits (believe me, there are some duds that I don't waste your time with). Well, I recently had a new menu hit- Chicken Alfredo Tortellini! Tortellini is a relatively new favorite around here, but I've been trying different recipes that feature it (remember my roundup of 13 Easy & Delicious Tortellini Recipes?) We love the cheesy flavor of alfredo sauce, and, when I thought about pairing it with cheese tortellini, I knew it would be the cheesiest delicious pasta dinner ever and it was Oh, so good!

Party On The Porch: Gifts, Makeovers & Goodies

Hey All!
I hope you had a wonderful Mother's Day. Can you believe it's Party time again? We are in the part of the calendar I call the  "whirlwind season." There is so much going on around here with the hub's end-of-year school stuff, track season, the garden going in, cookouts, and I don't know what all! The hub had more athletes qualify for the KY State Track meet this year than he's had in a long time! So proud of them all! 
There's also the end-of-season cook-out to plan and course finals are starting next week. Weeeee! There is no such thing as a finished to-do list for a teacher...at least not my guy. God bless everyone that works to help educate our youth! I believe it is a calling as much as it is a profession. I know I would never take on the task willingly...but I'm a happy helper.

Back to the party...there was an abundance of nice gift projects/ideas last week due to Mother's Day, Teacher Appreciation, and Graduations. There were also oodles of organization posts...very inspiring. I enjoyed checking out all of the posts last week. I always end up hungry, inspired, and entertained.

Garlic Mashed Potatoes

We love a good slow cooker meal and the other day I prepared Slow Cooker Pesto Garlic Chicken and as a side dish I made Garlic Mashed Potatoes. Since I was already cooking the main meal in the slow cooker I thought why use the stove or oven to prepare the mashed potatoes? So I just wrapped the potatoes in foil and put them the slow cooker with the chicken, garlic and onions. Win! 
These potatoes are really delicious...really full of flavor. My brother had the leftovers the next day for lunch and commented how good they were.

Grilled Philly Burgers with Garlic Aioli

We love the flavors of the classic, iconic Philly Steak sandwich, but, since this is National Hamburger month, I thought I would take the flavors of sauteed onions, mushrooms, bell peppers, and provolone cheese and create Philly Burgers. A great sandwich is complemented by great condiments (so obvious, right?), so I whipped up a garlic aioli that served as a terrific addition to this delicious sandwich.

Party On The Porch: Fun, Frugal and Fresh

Hey all!
It's been a good week on the Porch. We've had some glorious weather, and I've heard the tiller running up on the hill this week which means the veggie garden is nearly ready for planting. We  replant our canna bulbs each year and now they're planted as well as some Surprise or Resurrection lilies my neighbor gave me.
 
I hope you've had a beautiful, productive week as well. If I were to go by the party posts last week, I could easily state that you are a creative, industrious bunch! I enjoyed all the ideas for Mother's Day (so thoughtful!) and I always enjoy the gardening posts, too. I especially appreciate it when you share things that you've learned, which saves me from learning it the hard way. As always you are all appreciated; I applaud your talents. Thanks for sharing them here!

This easy-to-make/easy on the budget/time friendly recipe for Slow Cooker Pesto Garlic Chicken has just 4 ingredients. Don't you love recipes that are frugal, simple, and demand little time, but create a meal that feels special? I do! It's like having Sunday dinner on a Monday: boneless chicken breasts, along with garlic mashed potatoes and green beans. (Psst! I used the garlic that cooked with the chicken to make my mashed potatoes.)
