Easy Homemade Lasagna

We love pasta because it is delicious, easy to prepare, and inexpensive. Lasagna, though, was always an exception because it seemed more complicated and required ingredients we rarely used, like ricotta cheese. On top of that, it also seemed to take more time to prepare because of the two cooking steps - boiling the noodles, then baking the assembled dish. Part of my goal here at the Porch is to look for products that save time when meal planning. And - this may not be a surprise to some of you - I found no-boil lasagna noodles. Using the no-boil lasagna, it took about 25 minutes to assemble the lasagna, which is not bad when it comes to meal prep! The noodles performed excellently, cooking to delicious tenderness. We just expanded our pasta repertoire by one wonderful dish.

Baked Breakfast Tortillas

First, I have a quick breakfast, brunch, or snack for you today: Baked Breakfast Tortillas. It is dee-lish and easy-to-make, both features I like, especially in the morning! Also, this recipe can be tailored to your family's tastes, or just change it for variety from time-to-time. You can vary the cheese or the breakfast meat (bacon, sausage, cubed ham, etc.) or add vegetables like peppers or chilies to spice things up...the possibilities are wide open. I hope you enjoy it.

Party On The Porch: Summertime Crafts, DIY Projects & Recipes

Hey All-
The hubby and I were marveling how the days have seemed to stretch out so that it feels like he's been on a long summer break already when it is only the end of the second week. This makes me happy; I want him to feel refreshed, revived, and renewed when schools rolls around again. I hope we all can be refreshed, revived, and renewed this summer!

Potatoburgers with Gravy

This recipe comes from one of the newer additions to my growing cookbook collection. The hubby is a book-lover himself, so, when he saw books at a local yard sale, he stopped to look around. He found this 1980s-era cookbook that features budget-minded recipes...perfect! Today's recipe is "Potatoburgers with Gravy."
It was a delight; it was delicious. The burgers were savory and tender, but it is the gravy that really makes this dish. For a quick side, I whipped up some mashed potatoes, which went well with the gravy, too. Serving it this way made it reminiscent of Shepherd's Pie. I highly recommend you give this one a try.

Savory German Noodles with Smoked Sausage

Our street has several unique characteristics. One is that, to be as close as it is to one of the busiest intersections in the area, it is really quiet. Another is that hubby and I are the youngest people on our block. One day, my 86-year-old neighbor, Jean, called to tell me about a dish she remembered having loved as a child, called German Noodles. She said it was like German Potato Salad...but without the potatoes. Well, if there is an upgrade from potatoes around here, it is noodles! I couldn't wait to try it, but, just before I started cooking, I decided to make one change: I replaced the bacon in the original for smoked sausage.

So good to be back together again for the #partyontheporch! I hope everyone had a great Flag Day and Father's Day. I didn't get to see my Dad this weekend but I'm hoping to over the weekend of the 4th. Open-faced Breakfast Muffins

Breakfast is an important meal, and we've done well at our house in making it a priority, even on hectic mornings. Of course, the big breakfast menu is reserved for weekends - when hubby likes to take on breakfast - but the quick and easy daystarter recipes are the ones that help us get our motors running right. This easy-to-make, open-faced breakfast muffin is one of those jiffy-delicious recipes that we enjoy. It has typical breakfast favorites - muffins and eggs - and adds a mustard sauce for just the right pop of flavor.

Dill Potato Salad...a quick, easy side dish favorite!

We love this Dill Potato Salad served hot or cold. It is a great side dish for your summer menus. For me, dill is one of those flavors of summer, much like lemon. I love it in dips, deviled eggs, fish sauces, and dressings.
I had to prepare this recipe twice (to everyone's delight) in order to get photos. The first batch was consumed before I could get my camera set up! This dill potato salad recipe is a summer favorite that we'll be having often.

Party On The Porch: Inspiring Banquet for Father’s Day, Summertime & more

Since last report, we did get that wonderful soaking rain the garden so desperately needed. I'll share garden update pictures soon. The hubby has started his summer break, although it will be a busy one. We're enjoying cool, breezy evenings on our porch - sitting on the glider, talking, drinking iced tea, and watching our pup put on a show for us. That is summertime heaven to me. 
We had one of our largest parties in awhile, thanks to a wave of new faces! Welcome! I believe I made it around to follow you all on at least one of the social media. If I missed you, please let me know; I'd like to stay connected (that goes for all who #partyontheporch). I love seeing all of these photos taken outdoors with the summery backgrounds. Homemade Hot Dog Chili aka Coney Sauce

There are few things identified with a single season...fir trees and Christmas, eggs and Easter...but none, in my mind, is as connected with a season like hot dogs are with summer. From cookouts to ball games, the hot dog is the sandwich of the season, and, here on the Porch, a hot dog is not a hot dog without chili.
The best things on any table are homemade, and the same is true with hot dog chili (or hot dog sauce) here at the Porch.

Easy Kidney Bean Salad

I am a longtime collector. Right now, I am collecting cookbooks; recently, I found a collection of cookbooks from the Culinary Art Institute dating from the 40s and 50s. As I browsed them, I remembered some of the recipes from my childhood when I lived with my grandparents. 

Today's recipe is a perfect example. My Gran would make a cold red bean salad to take to family gatherings and reunions (My Poppaw was a preacher, and we attended a LOT of reunions!). I cannot attest that this is the exact recipe, but it brings back fond memories, nevertheless.  

I remembered the bean portion of the recipe, but not the dressing, so I was wary. I only added about half of the dressing, at first, but after tasting the salad, I was so happy with the results, I added the rest. It's a delicious salad that makes a great side dish to all the popular favorites of summer...BBQ, burgers, dogs, and brats! I hope you will add this creamy, sweet, tangy kidney bean salad to your summer menu.

Party On The Porch: Food, Faith, Home & Hobbies

Hello! 
I hope everyone is having a great week. It's been hot, but beautiful here in Bluegrass country. The crepe myrtles have bloomed and are simply stunning. Unfortunately, early in our garden season, rain has become our biggest concern. It's funny how you make preparation for problems anticipated based on previous years...wildlife, insects, too MUCH rain, etc. and the issue always ends up being something else. So...we are praying for rain these days. 
Hubby is in his final full week of school. Students are gone for the summer, but, due to the harsh winter and snow days, teachers are still in school to meet contract requirements. Oh well, it gives them time to prep for next year. Nevertheless, we're excited about the start of summer break. 

On to the party... Welcome! And a big HI to all the new party-goers! I hope you'll feel welcome and come back regularly. Those of you that are here each week...Thank you! I appreciate you all and truly enjoy reading and sharing your projects, recipes and wisdom. So let's do it all again! Party on! Excellent!

Chocolate Cookie Cake...low sugar version

I spied a recipe for Chocolate-Covered Oreo Cake on the Kraft web page some time ago and thought it would make a perfect birthday cake for the hubby. I knew I could make it using low and no sugar ingredients, making it a true labor of love...so this weekend, I made the hubby really happy with his own giant Chocolate Cookie Cake. 

This cake is delicious (you will never know it is low sugar) and is very similar to another Porch favorite, the Orange Cream Cake, in appearance and process (though I do not have a low sugar version of the Orange Cream Cake figured out...yet.)
