Corn Salad...tasty & tangy

It is the best time of the year for cooking around our house with all of the fresh ingredients coming in from the garden. I love fresh from the garden recipes so much that I even have a Pinterest board dedicated to Garden Harvest Recipes. The Summer Corn Salad recipe I'm sharing today is perfect for fresh from the garden peppers, corn, green onions, and tomatoes. Most of these ingredients are not ready for harvest here yet, but I know some of you are already bringing these items in, so I wanted to share this colorful, flavorful, and healthy recipe with you.

Cobb Salad with Garlic Infused Croutons

The beauty of Cobb salad is the flexibility in its preparation. You can go traditional with Bleu Cheese and avocado, or not! We prefer the "not" at our house. A Cobb salad is a chopped salad that features eggs and grilled chicken; We do chop our lettuce, but we set up salad bar-style so everyone can customize their salad with their favorite ingredients. It is such an easy and healthy meal that it has become a Sunday lunch favorite. Many folks only see salad as a side dish, but a Cobb Salad, when served traditionally with chicken and bacon,  is certainly a filling meal.

Savory German Noodles with Smoked Sausage

Our street has several unique characteristics. One is that, to be as close as it is to one of the busiest intersections in the area, it is really quiet. Another is that hubby and I are the youngest people on our block. One day, my 86-year-old neighbor, Jean, called to tell me about a dish she remembered having loved as a child, called German Noodles. She said it was like German Potato Salad...but without the potatoes. Well, if there is an upgrade from potatoes around here, it is noodles! I couldn't wait to try it, but, just before I started cooking, I decided to make one change: I replaced the bacon in the original for smoked sausage.

We love this Dill Potato Salad served hot or cold. It is a great side dish for your summer menus. For me, dill is one of those flavors of summer, much like lemon. I love it in dips, deviled eggs, fish sauces, and dressings.
I had to prepare this recipe twice (to everyone's delight) in order to get photos. The first batch was consumed before I could get my camera set up! This dill potato salad recipe is a summer favorite that we'll be having often.

Easy Kidney Bean Salad

I am a longtime collector. Right now, I am collecting cookbooks; recently, I found a collection of cookbooks from the Culinary Art Institute dating from the 40s and 50s. As I browsed them, I remembered some of the recipes from my childhood when I lived with my grandparents. 

Today's recipe is a perfect example. My Gran would make a cold red bean salad to take to family gatherings and reunions (My Poppaw was a preacher, and we attended a LOT of reunions!). I cannot attest that this is the exact recipe, but it brings back fond memories, nevertheless.  

I remembered the bean portion of the recipe, but not the dressing, so I was wary. I only added about half of the dressing, at first, but after tasting the salad, I was so happy with the results, I added the rest. It's a delicious salad that makes a great side dish to all the popular favorites of summer...BBQ, burgers, dogs, and brats! I hope you will add this creamy, sweet, tangy kidney bean salad to your summer menu.

Waldorf Salad...Crunchy and Creamy

To my mind, salads are nearly as great as casseroles and crock pot dinners. There are so many fantastic salads; they are a lot like soup in that you can throw nearly anything in them and have a winner! This recipe for Waldorf Salad looks like it was created by someone who just kept throwing things together until they won! My gran would make Waldorf Salad for special gatherings, but it became so popular that you could find a bowl in the refrigerator on a regular basis. I don't eat many apples (unless of course, there is an awesome dip involved), but I love their crunchy sweetness in this salad; Waldorf Salad is a winning combination of sweet and savory, crunchy and creamy.

Best Old Fashioned Macaroni Salad

Most folks would agree that food and memories have a close relationship. This old fashioned macaroni salad takes me back to my childhood days. This was a recipe my mom prepared in her healthy years, which takes me back to when I was around 8 years old. Further, this recipe was family-wide - regardless of which relative prepared it, this was the recipe they all used. It was/is a common side dish at the dinner table and a must have for the holidays and BBQs!

Creamy Cucumber Dill Salad

Our garden seemed to take its time starting to produce, but once it has...well, suffice it to say we have thoroughly enjoyed the garden this year! The cucumber salad I am sharing today has been our summer favorite...we literally prepare a fresh batch 2-3 times a week. Psst!...the bowls coming back to the sink are really clean too... someone (or two,) is literally drinking the leftover dressing! This salad is one that my gran would make, but, as a kid, I never gave it a chance...truly, my loss. 
I can see why she always kept a bowl of it in the fridge in the summer. Even if you don't have a garden, having this on hand makes it worth buying the cucumbers.

Easy Peachy Fruit Salad Recipe

Over the course of this summer - and the various holiday gatherings - we've hit upon a new version of an old favorite...fruit cocktail, or fruit salad. It has long been a winter holiday tradition in our family, providing a bright note in the heart of the colder days. With the ready availability of fresh fruits through the growing seasons, it is also a summer favorite. 

Fruit salad is great because of its simplicity. My sole complaint was always the inevitable browning of the fruit. Basically, my fruit salad had a short shelf life. This new recipe seems to extend the appearance of freshness, and has more flavor than the traditional recipe we had always prepared.

The shelf life is no longer, but it is now because it is usually gone in a hurry due to my about-to-be not-so-secret ingredient.

This is our favorite pasta salad. It is a wonderful combination of crunchy and soft with lots of bacon and cheese! I use this recipe for big family gatherings since it's so easy to make and you can prepare it ahead of time too!

Every spring, I am filled with anticipation once the garden is in because we will be harvesting again, soon. We have a big garden planted with several varieties of tomatoes, bush and pole beans, squash, peppers, cauliflower, and broccoli. As soon as the crops start rolling in, I will share photos.
  One of my favorite things is to take fresh produce and try new recipes! I think it would be hard to fail on any recipe using fresh-from-the-garden vegetables...the vibrant flavors of homegrown produce enhances everything. 
  With this in mind, I have gathered some past garden harvest recipes to share with you!

Grape Salad...creamy and crunchy too!

Does your family eat a lot of fruit? I was thinking about this and realized that we do.  In the mornings, we tend to eat  bananas and blueberries and in the evenings, we're more likely to eat strawberries, oranges pineapple or grapes.

This grape salad is a creamy dessert that still has a bit of a bite. We like it because there is much less dessert-guilt...unlike some desserts. It only takes minutes to make and the ingredients may be modified to fit your tastes...or what you have on hand. For instance, you can use walnuts instead of pecans. 


Cornbread Salad...a meal or side dish

Years ago, while cooking with a friend for our church Homecoming celebration, I learned that Cornbread Salad was an expected standard at church social events in our region.
I was both amazed and amused that the components basically added up to a typical country pinto bean dinner except it all got mixed up in one bowl together...with a dressing, of course (it is a salad, after all)!

Obviously, this salad is hearty and can serve as a meal by itself or as a refreshing side dish with the pop of delicious Ranch flavor. As with any bean dinner, if there are leftovers, the flavors actually get better on day 2.

I am a late-comer among fans of the salty-sweet combo.  My friend from high school always said she loved the two together and would eat chips with her candy bar, but I never thought it sounded that good. I was just fine with a candy bar or chips. However, palettes change and I now understand her appreciation for that tasty combination...thanks to this Jello Pretzel Dessert!

Delightful Watermelon-Cucumber Salad

We harvested a couple of small watermelons from the garden the other day. The lack of rain, coupled with the recent high temperatures, caused one to split, so we decided to cut our losses and harvest two of them early.

I wanted to use the melon and some other produce harvested from the garden that day -cucumber and green onions - so I did what so many do... I Googled! And I found that folks use all of these in a salad together! Awesome! So I cubed the 2 little watermelons,* cubed 2 medium cucumbers, and gave a medium chop to a bunch of green onions (about 6). I also chopped up 1/2 of good sized red onion we had in the pantry.
Placed it all in a bowl, gave it a couple of tosses, and Ta-dah! Salad was ready.

But what is a salad without dressing? Among the many salad recipes, I found a dressing that not only sounded good on paper, but actually complemented the sweetness of the watermelon and added a wonderful dimension to the salad. As good as the salad looks raw (and it does!), this dressing should not be skipped. 
Yum-0 (May I borrow that, Ms. Ray?)...nothing tastes as good as summertime!

(*For the garden enthusiast or anyone else curious, we grew Sugar Baby watermelons, Evergreen white bunching onions and Straight Eight cucumbers.) 

 Watermelon Cucumber Salad with Sweet & Sour Dressing

Salad Ingredients
Cubed watermelon, bite-size
2-3 cubed cucumbers
6 green onions, chopped
1 med. chopped red onion, optional

Sweet & Sour Dressing
1/2 cider vinegar
1 cup water
1/4 cup Splenda Blend (1/2 cup if using sugar)
Salt & Pepper to taste (I used kosher salt and fresh cracked black pepper.)
(The recipe also called for 1 T. poppy seeds; I didn't have any, so I left them out.

Fresh Broccoli Salad

I know I've said it before, but there is nothing better than eating dishes that are prepared with fresh vegetables from your own garden. I get such a sense of accomplishment; I feel globally responsible, more frugal, and healthier, too! And last (but certainly not least) it tastes better than store-bought!

Today, the garden gave us fresh broccoli, so tonight we ate a great broccoli salad. It took just a few minutes to prepare, was pretty to look at and would be a great side dish, especially at a summer BBQ. It was delicious too!

This recipe is very flexible. I was  inspired by Paula Deen, but I had to change it up to suit our tastes, and I forgot to add the cheddar cheese her recipe calls for. The recipe below is as I prepared it tonight.

I think next time, I'm going to experiment and use a Buttermilk-Garlic dressing! Double Yum!!


Homemade Croutons with Garlic Infused Olive Oil

Do you still have buns leftover from the holiday weekend? We did. In my never-ending quest to waste not, I decided to make homemade croutons using the leftover hot dog buns. It really is easy and homemade croutons add so much more to your salad than any store bought brand. I do buy croutons from time to time, but, as usual, nothing beats homemade!
